Non-alcoholicFrozenPineappleCoconut

Virgin piña colada

Ingredients

  • 24 fluid ounces (3 cups) pineapple juice
  • 12 fluid ounces (1 1/2 cups) cream of coconut
  • 4–5 cups ice
  • 1–2 tablespoons fresh lime juice (optional)

Instructions

  1. Add the pineapple juice, cream of coconut, 4 cups of ice, and optional lime juice to a blender. If needed, blend in two equal batches so the blender is not overfilled.
  2. Blend until smooth. Add the remaining ice a little at a time for a thicker frozen texture.
  3. Taste and adjust: more cream of coconut makes it sweeter and richer; extra ice or a little lime juice can balance the sweetness. If it is too thick, blend in a little more pineapple juice.
  4. Divide among six 8-ounce glasses or eight 6-ounce glasses and serve immediately.

Serving and ingredient notes

Instructions

  1. The yield is approximate and varies with the ice, blending, and any adjustments.
  2. Use sweetened cream of coconut, not unsweetened coconut cream or coconut milk.

Estimated using generic USDA FoodData Central ingredient profiles and specified label proxies; not laboratory tested. Assumes 3 cups unsweetened pineapple juice (750 g), 12 fluid ounces sweetened cream of coconut (24 tablespoons), and six equal servings. Cream-of-coconut model uses the Coco Lopez label listed by H-E-B: 130 calories, 6 g fat, 5 g saturated fat, 19 g carbohydrate, 18 g sugar, and 17 g added sugar per 2 tablespoons. Fiber and protein are not displayed because the cream-of-coconut label gives less-than amounts. Excludes optional lime and later juice/syrup additions. For eight servings, multiply these values by 0.75. Label formulations and actual blended volume vary.
